Zucchini Bread topped with Walnuts and Pecans
Zucchini bread!! I never thought I would see you again! This is another recipe that took me a few attempts. But really I think I just wanted to keep making it.
Ingredients
3 eggs
1/2 c olive oil
1 tsp vanilla
2 1/2 cups almond flour
1 c sugar substitute
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp nutmeg
1 tsp ground cinnamon
1/4 tsp ground ginger
1 c grated zucchini
1/4 c chopped walnuts/pecans
Directions
Preheat oven to 350, grease bread pan
In one bowl whisk eggs, oil, vanilla
In another bowl mix almond flour, sugar substitute, salt, baking powder, nutmeg, cinnamon and ginger. See aside
Dry zucchini off in a dish towel. The drier the better.
Add zucchini in with egg mixture
Slowly add in dry ingredients to egg and zucchini mixture.
Pour into bread pan
Spoon walnuts and pecans on top, gently pressing into batter.
Bake 60-70 min until golden brown and a toothpick comes out clean.
